Elk Farm Research

Hello everyone, I am brand new to this forum and look forward to getting to know everyone here. Currently I am seeking to transition my family’s Trophy Elk operation into a strictly elk meat operation. Would love it if anyone could share any resources on this. It could include any supply and demand research done into the market, marketing strategies, business plans, or information on the process of getting your meat certified to sell. Cervid: mule deer,whitetail,elk,goats,bighorn & stone sheep & Alaskan dahl sheep
Why would you want to go from the best market to our lowest market which is the meat market? I don't understand why someone would want to do this unless required by CWD rules in your county to do so.
I guess if your going to sell meat directly that would make more money than just selling a live elk into the meat market.
