Cervid: Western Canadian white-tailed deer
I just had a call from someone in Texas wanting to know the nutritional values for venison. It seems that they used our venison chili recipe and their client wanted full nutritional information.



I have some basic information on our Vension site (cooking), but would be interested whether anyone knew of a more detailed analysis.



BTW, I just noticed that our venison site has over 10,000 visitors this month already. Is there a meat market for the deer industry that we are totally missing?

Some of us are not missing it. But there ain't many whites goin' into the meat bin lately. 1/2 of all deer are BELOW AVERAGE so we better get those culls out of the system soon.
