Ground Elk and Potato Casserole Recipe

  • 1 pound ground elk
  • 1 minced onion
  • 3 sliced potatoes
  • 1 cup cheese
  • ½ cup brown sugar
  • ½ cup ketchup
  • 1 large can pork and beans
  • 8-10 strips of bacon

Brown elk and onion (add water, bouillon or coffee if necessary).

Put in greased 9×13 inch baking dish.

Add potatoes, then cheese.

Mix beans, brown sugar, and ketchup; pour over cheese layer.

Top with strips of bacon.

Bake 45-60 minutes at 375 degrees. Enjoy!
