We've always been told if you get higher than 18%, unless you are cutting it with corn etc., it is just going out the other end and not doing anything for the deer.

Do you add anything like minerals?
 
I add about 1/2 pound of ADM Minerals per 100#.  Usually up it to 1# when they start fawning and growing antlers.  Soy oil and molasses will help it stick, but a lot ends up in fines and gets feed to the wild deer when I clean out their troughs instead of being injested.  The textured feeds I've seen look like good mixes but they are too expensive for me to feed.  I found that adding oats and sunflowers attracted birds and have cut them out.  I am currently feeding about 10% corn, 5% Calf Manna and rest ADM 18%.  I only add the calf manna because it smells good and has more minerals. I increased corn a while back and a lot had loose stool so I cut it back down immediately, but I know there are some very experienced farmers feeding 50% corn rations. 
 
We do not add any minerals. We add a small amount of corn and alfalfa in the winter. If we put mineral blocks in the pens they don't touch them.
 
On the 50% corn ration, that can cause acidosis, which can kill them. Corn is like candy to them. Too much corn is definitely a bad thing.

I know, I think it is crazy but there are people feeding it in crazy percentages.  I limit mine to 10-12%.  What is your opinion on too much fat?  My understanding is 8% is going to lead to problems.
 
Yes, more around 4%. Talk to an animal nutritionist. Our Purina rep always has answers to these questions. He also will come out and take a look at our herd to see if anything stands out to him etc.
 
My mix is currently 16% protien, about 6% fat. i may bump the protien to 18% next time I get feed.
 
20 % antlermax very little corn free choice whole cottonseed is my feeding tech fiber is 29% and 22% protein T&S
