I have had a small deer farm for 4 years now and we have some good deer, "one which just dropped his horns yesturday and was scored 203 5/8 @2 yrs old!!", but we are going to be picking up the small herd and moving in the next year or so and I would like everyones opinion on Pen setups. We are going to have about 15acres to work with. The house will be in front and a large shed for a handling facility next to it. How would you guys build the pens? Hallways, gates, ect... I need advice to start off on the right foot.

first question ,
I am assuming that the property is a rectangle is there any thing on your neighbors property that you need to stay away from?
I prefer an alley , mine is about 30 yards wide and narrows to about 20 feet where the deer go into the catch corral. I like the wider alley if the deer spook back at you you can give them enough room to let them by with out a lot of fence crashing
a deer handling is as much about a persons personality as it is about handling deer, some peoples posture is much more threatening than others and experience in "reading" deer body language becomes the biggest asset when moving deer

The 15 acres has the rest of our own 40 acres around it and the nearest neighbor is a relative that is about 1/4 mile down the road.... so I don't think the neighbors will be an issue.
I have tunnels with sliding doors and a Mama squeeze , it has worked great for 11 years

When you start building your boxes use screws (no nails) because you will probably need to make changes and it is a whole lot easier to undo.
Each person's setup will be different, visit as many farms as possible, Ask what they like and what they don't. Try to help someone that is going to work some deer and that will help you quite a bit.

Avoid 90 degree corners in your handling system and in your pens. Our pens have 45 degree corners which keeps deer from getting trapped in a corner. It is easier to move deer through a system that doesn't have the sharp corners as well.
